Eggplant parmesan

I made eggplant parmesan this evening after my evening walk. I am not sure why I am blogging about it but I am. I guess I have a sense of satisfaction of having cooked. I think I also like going through my blog sometimes and, have pictures and stories to remember of my kitchen.

I certainly enjoy cooking and, trying new recipes.
